Patti’s 10 lb. Lasagna
Patti’s beloved Dad and his Mother aka Bubbie Lang believed any problem could be solved with the Lord’s help and a hot, heavy meal. Being it’s been raining and raining here in Southern California we are cooking inside. And her Ken has been whimpering because he couldn’t go outside and play with his grills; it was time for comfort food!
Prep Time: Almost all day
Cook Time: Almost all day
Oven: 400 degrees
Ingredients: Sauce
2 ½ lbs. extra lean ground beef
2 lbs. Italian sausage, hot &/or mild
½ lb. pepperoni, chopped
1 cup garlic, minced
1 large sweet onion, chopped
1 large red onion, chopped
1 28 oz. can diced tomatoes, drained
1 28 oz. jar (your favorite) spaghetti sauce
2 6 oz. cans tomato paste
1 jar salsa, we like hot & chunky
1 package frozen spinach, thawed and drained
1 cup red wine
½ cup oregano
5 tablespoons chipotle, ground
1 cup Country Bob’s Seasoning Sauce
Salt & Pepper, to taste
Cook meats with onion and garlic in extra large Dutch oven until meat is no longer pink. Drain well, we just dump it in a colander, then back into Dutch oven. Add remaining ingredients and bring to boil. Cover and simmer 6 hours, stirring occasionally.
Ingredients: Cheese Filling
2 lbs. Ricotta cheese
1 lb. Mozzarella cheese
½ lb. Swiss cheese
½ lb. Cheddar cheese
½ lb. Monterey Jack cheese
½ lb. Pepper Jack
½ lb. Asiago cheese
¾ lb. Parmesan cheese
¾ lb. Pepperoni, chopped
6 eggs, beaten
½ cup half & half
1 package frozen spinach, thawed and drained
Directions:
Shred cheeses, except ricotta into a large bowl. In separate bowl, add remaining ingredients. Blend thoroughly into cheese bowl.
Use ¾ lb. lasagna noodles, cooked according to package directions. Drain and put back into noodle pot full of cold water to stop cooking process.
1 lb. Parmesan cheese, grated
Preheat oven to 400 degrees. Grease 2 13x9 glass baking dishes. Into each dish spread 1 cup of sauce. Lay out 4 noodles lengthwise. Lightly cover noodles with cheese mixture. Ladle on sauce, just enough to cover cheese. Repeat until you run out of goodies Cover with grated parmesan.
Bake 1 hour until brown and bubbly.
