Now that Thanksgiving is past we have a refrigerator full of our wonderful turkey and lamb. We really enjoy our BBQ leftovers and we call these recipes “Love, the Second Time Around”. It gives us the opportunity to be even more creative in the kitchen. Sometimes things are Ok, and sometimes you never want to see it again. But most times they are awesome. We are able to bring the flavors of the smoker into our kitchen.

Patti’s Tetrazzini was one of those times where we needed more leftovers. The turkey was tender and juicy, (but we already knew that) and her sauce was creamy and cheesy. The smoke flavor from the grill along with the crunchy toasted topping of Patti’s casserole was great. Sadly, there were no leftover leftovers…


Prep Time: 20 minutes

Cook Time: 1 Hour

Oven: 350 Degrees

Note: Don’t laugh at our old chipped dish. It is a beautiful old dish that dates back almost 100 years.  At one time it was somebody’s treasure, but then cast aside for something new. Something we promised never to do to each other! Patti and I hunt the yard sales and flea markets for old dishes like this just to take pictures.

Ingredients:

1 lb. linguine

2 cups broccoli, thawed

2 cans cream of mushroom soup

1 cup buttermilk

2 cups shredded parmesan cheese, divided

1 teaspoon Country Bob’s seasoning salt

4 cups cooked turkey, cubed

3 tablespoons cooking sherry

½ cup green onion, chopped

¼ lb. bacon, chopped

2 cups cheese crackers, crushed

¼ cup butter, melted


Directions:

Prepare pasta according to package directions, but subtract 2 minutes from boiling time.

Cook bacon until limp-done. Into large bowl add bacon, soup, turkey, buttermilk, seasonings and one cup of cheese. In bacon drippings stir fry broccoli and onion for three minutes, and then blend into turkey mixture. Place into lightly greased casserole dish.

Combine melted butter with crackers and remaining cheese and a few more shakes of Country Bob’s.

Sprinkle over top of turkey mixture.

Bake at 350 for one hour or until bubbly and top is nicely browned.

Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to your taste.
