Tonight we want to do some BBQ Pork Loin Chops on the Akorn Kamado. The chops were very tender and just made for an easy and simple date night dinner. I dusted the chops with Big Dick’s “Big Kahuna” rub and sauced them up the last 5 minutes of our cook.

Patti and I have set one night a week just for us. It’s our date night. We usually put something special on our Akorn Kamado but sometimes we cook inside. We always eat outside on our patio where it is very comfortable with a rainforest theme. Wood Pellet Patio Heater, little lights, candles, lanterns and surround sound. We enjoy a little wine, or strawberry margaritas using frozen strawberries for ice, good food, music and sometimes a dance or two…

Cook Time: 10 minutes @ 400 degrees (205c)

Cooking Directions: Akorn Kamado

I like to use Lump Charcoal, burns cleaner and the food seams to taste better. So with that said start your fire and when it burns down set your vents for your desired temperature range. Tonight we are grilling at 400 degrees (205c). Hot and fast.

After your fire is set and the grill grate are hot place your chops directly onto the grill for 5 minutes. We are going to give them a quarter turn at 2 ½ minutes to for those nice sear marks that ad so much flavor. After 5 minutes sauce them and flip them, don’t forget your quarter turn. Sauce them again and after 5 minutes flip them to caramelize the sauce a bit.

When the meat reaches an internal temp around 130 – 140 degrees (55c) pull it off, cover it and let it rest for 10 minutes before serving. U.S.D.A. safe is 145* (63c) Keep in mind that the meat will continue cooking for another 5 to 10 degrees after you pull it off the grill. I use a Maverick ProTemp Instant Read Thermometer for checking meat temps.

The important thing to keep in mind is TIME & TEMPERATURE. You can even do some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.

Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. Take it and run with it….
