We were invited to a neighbor’s potluck and asked to bring an appetizer. Ken wanted to bring little meatballs “Buffalo style”. Using our favorite ground beef, which is so very lean, our meatballs didn’t shrink the way ordinary fattier ground beef does. So, instead of golf ball size we had more like tennis ball size. Ken seasoned them with < and basted them with wing sauce. You can also use Frank’s or your favorite hot sauce. The 3lbs. of Zaycon Fresh ground beef made 20 meatballs. Our friends want us next time to bring 5lbs. worth, in other words they were a huge hit grilled to perfection

  • 3lbs. Fresh Ground Beef

  • Dried red pepper flakes, to taste
  • Dried crushed garlic, to taste
  • Cheddar cheese, cut into small cubes
  • 1 bottle Louisiana Wing Sauce, divided
  • Blue cheese salad dressing
  • Bacon Ranch salad dressing

Directions: Buffalo Style Meatballs

I like to use Lump Charcoal, burns cleaner and the food seams to taste better. So, with that said, start your fire and when it burns down set your vents for your desired temperature range.

Mix your seasoning with your meat in a bowl. Use a measuring cup to keep the meat balls the same size. Scoop out some meat to form your meatball. We used a 1/3 cup for this, you can go bigger or smaller. Flatten out the meat in your hand and place the cheese cube in the middle of it. Wrap the meat around the cheese making a ball.

When the meatballs reach an internal temp around 165 degrees (74c) pull them off, cover it and let it rest for 10 minutes before serving. This is U.S.D.A. safe for all ground meat. I use a Maverick ProTemp Instant Read Thermometer for checking meat temps.

Cooking In the Oven:

We have been getting requests for recipe conversions for the Pacific Living Outdoor Oven. I tell folks all the time that cooking on a Wood Pellet Grill/Smoker is just as easy as cooking in your oven. Just about anyone can do it and do it well. Think about it. You set your control knob to the temp you want, put your meat in and leave it for a set time. It is the same thing, time and temperature is what it is all about. The grill is just like your oven except it uses wood pellets and has wheels. Do 40 minutes here at 350 (174c).

Note: The Pacific Living Outdoor Oven also has a smoke box.

The important thing to keep in mind is TIME & TEMPERATURE. You can even do some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.

Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. Take it and run with it….
