Date Night Pizza Cake was on the Pillsbury web site, we just took it several steps further.We used some of Raider Red ground pork, it’s so lean it works great in recipes. So, Ken wanted that and, of course, pepperoni. Patti wanted ground beef and we both wanted bacon. Then we loaded the layers with our smoked cheese and Briggs True Candied Jalapenos and the rest is yummy pizza history. To make it even easier you can make it the night before. Patti wants to make another one instead of a regular birthday cake.

Patti and I have set one night a week just for us. It’s our date night. We usually put something special on our Green Mountain Wood Pellet Grill/Smoker but sometimes we cook inside. We always eat outside on our patio where it is very comfortable with a rainforest theme.  Wood Pellet Patio Heater, little lights, candles, lanterns and surround sound. We enjoy a little wine, or strawberry margaritas using frozen strawberries for ice, good food, music and sometimes a dance or two…

Prep Time: 30 minutes
Cook Time: 50 minutes at 400* (205c)

Cooking Directions: Date Night Pizza Cake

Precook the Raider Red ground pork and drain. We mixed in Chef of the Future Floribbean Seasoning. Do the same with the beef we used our Date Night Heat seasoning.

Unroll the pizza dough and using the bottom of the spring pan (we used a 9-inch pan) for a pattern cut out a pizza round. Save the rest to line the sides. Do this for each layer you want to do. Precook these for 5 to 8 minutes to firm up for the crust layers. We did 3, you can go as high as you want…

Ok, all the prep is done and it time to start building your pizza cake. Line your spring pan with parchment paper. Place a pizza round into the bottom and then line the sides of the pan.

Sauce the pizza crust and add your fillings of choice. We love what smoked cheese does when cooking with it and we really piled it on here, about ½ to ¾ of an inch. You can cheese to your taste.

Add another pizza crust and repeat until you’re happy.

For the top layer, we used pepperoni, more smoked cheese, crumbled Raider Red Jalapeno Baconand piled on some Briggs True Candied Jalapenos.

We placed our Pizza Cake onto a Bull Rack tray for easy handling, (we use the Bull Racks for lots of things around the kitchen)

Preheat the grill to 400* (205c), place your pizza cake into the for about 40 minutes until the crust is done.

Be careful there will be a lot of HOT juice coming out when you cut this for serving.

I use a Maverick ProTemp Instant Read Thermometerfor checking meat temps.

Note: I get a lot of questions about the kind of pellets you can use with a recipe. Keep in mind that a recipe is just an outline. Some you need to follow closely like when you are making bread, but most you can do anything you can dream, our favorite way to cook. Feel free to mix and match the pellets until you find a combination you really like. Also, you are only smoking at temps less than 250 degrees (122c), anything higher is cooking and there will not be much if any smoke so it does not matter what kind of pellet you are using.

Cooking in the Oven: Date Night Pizza Cake

We have been getting requests for recipe conversions for the oven. I tell folks all the time that cooking on a Wood Pellet Grill/Smoker is just as easy as cooking in your oven. Just about anyone can do it and do it well. Think about it. You set your control knob to the temp you want, put your meat in and leave it for a set time. It is the same thing, time and temperature is what it is all about. The Grill is just like your oven except it uses wood pellets and has wheels.

Do 40 minutes here at 400* (205c).

About our Recipes

We do our recipes on our patio where we have a lineup of grills, including Green Mountain, Uuni Wood Fired Pizza Oven, Sawtooth, Louisiana, Royall, Memphis, Traeger pellet grills, Char Griller side box smoker, Saber, Charmglow, Char-Broil, The Big Easy, Lodge Sportsman’s, Brinkman and Weber. I call it our “Wall of Grill”. Our grilling styles are healthy and low fat and will fit pelletheads, gas, natural wood and even charcoal purists. Almost any of our recipes can be done on any kind of good BBQ.

The important thing to keep in mind is TIME & TEMPERATURE. You can do our recipes on any grill, even some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.

Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. Take it and run with it….
