I have been playing with my new Louisiana Cold Smoke Sidebox. It is a clean addition to any of the LG and Country Smoker Series of Louisiana Grills/Smokers. I have used it 4 or 5 times to cold smoke rib tips for a nice smoky flavor that I then finish off in the crock pot for other smokey dishes. We have enjoyed smoking some cheeses and nuts and will be doing some salmon soon and rib eye steaks tonight.

It is very easy to set up and start your smokes. Just start the grill, set the damper until you get the smoke flow and temperature you are looking for. Too easy…

The thing I like the most is that the Cold Smoker provides a cold smoke that allows you to smoke your foods before grilling. The cold smoke method allows for a much deeper smoke flavor on meat, chicken, fish, seafood, game and cheese without actually cooking the food before grilling.  I am smoking some rib eye steaks tonight before I grill them. It’s our Date Night tonight and I can’t wait for the sun to set. Cold smoking is better done on cooler days or evenings when the temperature is cooler.

The Cold Smoker has added a lot to my “To Do” list. I am thinking about curing my own bacon, ham and sausages. Then, you know you will have to do nuts, cheese and fish. Thankfully it’s going to be a long delicious summer. We are very pleased and you will be, too.
